We source coarse-milled grains from local Oregon farms.
The grain is mashed in hot water to convert starches to sugar.
The cooled mash is fermented in-house for five days.
A rough, pot still distillation results in “low-wines.”
The final spirit is distilled in our 22-plate copper Christian Carl still.
